We currently roast all of our coffee on the Stronghold S7X.

We chose the S7X because its three-stage heat system gives us greater control over how we develop each coffee. It allows us to explore different flavor profiles while maintaining the clarity, sweetness, and dimension we look for in the cup.

For us, the roaster is not simply a machine. It is another tool for understanding what each coffee can become.

Coffee can be brewed from around 3 days after roasting, and it can already taste very good at this stage.

However, through our experience with the Stronghold S7X, we have found that many of our coffees develop further with extended rest. We generally find a peak drinking window around 20-45 days after roasting, depending on the coffee.

If you want to experience the coffee at its most developed, we recommend giving it time to rest before brewing.

Keep the bag sealed with as little air exposure as possible and store it at room temperature, away from light, heat, and moisture.

An airtight container can be used, but our original coffee bag is already designed to provide sufficient protection for normal storage.

If you reach the coffee's preferred drinking window around 20-45 days after roasting, you can also freeze the beans to help preserve their character for longer. When freezing coffee, we recommend vacuum-sealing the beans or portioning them into individual cartridge tubes. This helps minimize air exposure and moisture, reducing the potential for crystallization and helping preserve the coffee's character.

Roasted coffee does not have a strict expiry date in the same way as perishable food.

However, coffee gradually loses its aromatic intensity and flavor after roasting. In our experience, around 45 days and beyond, you may begin to notice a decline in the coffee's flavor and clarity.

The coffee can still be consumed, but for the best experience, we recommend enjoying it within its intended drinking window.

Our Single Origin coffees are developed toward a light roast profile. We aim to preserve and highlight the coffee's natural character, including its clarity, sweetness, acidity, and dimensionality.

They are designed to work across filter and espresso, giving you the flexibility to explore the same coffee through different brewing methods. They can also work beautifully with smaller amounts of milk, such as in a piccolo.

Our Milk-Based Blends, on the other hand, are specifically developed for espresso and milk-based drinks. We roast these coffees toward a medium profile, with enough body, sweetness, and structure to remain expressive even when combined with a larger amount of milk.

The goal is not simply to roast darker, but to build a coffee that performs where it is intended to be enjoyed.

We don't see Omni Roast as a strict roast category. For us, it is better understood as a coffee developed to perform across different brewing methods.

Our Single Origin coffees are roasted as light as we believe the coffee can be while still developing properly. We believe lighter roasting can better preserve the coffee's flavor, clarity, and dimension, while respecting its terroir and the work of the producer.

So yes, our Single Origin coffees can be brewed as both filter and espresso.
